Mediterranean Turkey Stuffed Peppers

Hi guys! I'm back from trip to Disney for Food Blog Forum -- what a fantastic weekend! While I work on my recap post, I've got a great recipe for you over at The Cradle Coach's blog today!

Melissa's invitation to share my experiences with balancing blog and baby came at a time when I wasn't even sure how to get by from day to day! Three months later, I'm finally feeling like I'm getting the hang of things {whatever that means!}, and I'm sharing a little bit about my journey in hopes that it'll be helpful to other new moms, too.

Head over to the post to see my tips and to get the recipe for these easy Mediterranean Turkey Stuffed Peppers!

Nutty Olive Cheese Log

Hey guys! I took a little blogging break last week to get caught up on life stuff, but I'm ready to get back to sharing all kinds of things this week including recipes, dining reviews and my recap of a very fun culinary tour I took last weekend.

I'm easing back into things today by sharing a recipe over on my buddy Alice's blog, Hip Foodie Mom! You may recognize the name from a few weeks ago when Alice guest posted during my Ice Cream Social. I'm returning the favor by bringing over a super simple recipe that's perfect for summer entertaining: a Nutty Olive Cheese Log.

This is one of those recipes that's not really a recipe. It's more of a "toss everything into a bowl and mix it together" kind of thing that looks presentable enough to bring to a party or serve to friends. Most importantly it does NOT require cooking of any kind, which is fabulous because I might melt into a puddle of pregnantness if I have to stand in front of an oven right now. :)

Anyway, head over to Alice's blog for the recipe and to see why I feel like a "lucky duck" every time I make this!

Happy snacking!

Brazilian Coconut Brigadeiros

I know that some of you are still buried under piles of snow even though Spring has supposedly sprung. I'm guessing by some of your Facebook and Instagram posts that impatience is rearing its ugly head as you bundle up, yet again before walking out the door.

If you think waiting for warmer days is tough, you can imagine how my buddy Katie at Katie's Cucina is feeling as she waits for her little bundle of joy to arrive any day now!  {Come on, baby!} Today I'm filling in for Katie while she waits for progress with a recipe to keep everyone occupied!

Because I can't control the weather {or baby boy's tardiness!}, I thought I'd share the flavor of warm, sunny days to keep impatience at bay. These Brazilian Coconut Brigadeiros are just what you need to get you through what will {hopefully} be your last push through frigid days {and a different kind of push for Katie, of course}!

Sweet, tropical coconut flavor shines in these poppable bite-sized Brazilian treats. If you're a fan of dulce de leche, you'll love these easy-to-make candies. And wouldn't they be a fun sweet to whip up for Easter?

Hop over to Katie's blog for the recipe, and let's all send our best vibes for the signs of spring to arrive sooner than later!

What's In Your Fridge? | What Micky Eats

One of my favorite things about blogging is the amazing network of incredible bloggers I have connected with both online and in person. There are SO many great blogs out there with mouthwatering recipes, breathtaking photography and side-splitting humor that every time I come across one I want to share it with everyone!

When I randomly decided to write a post about the contents of my own fridge a few months ago {and got unexpected positive feedback... who knew y'all were as nosy as I am??}, I thought it would be a great way to introduce other food bloggers to you in a fun, unique format. After all, what could possibly tell you more about a true food-lover than their refrigerator?!

I put out an all-call for bloggers to step up and show us what's in their fridge... and someone actually volunteered! Brave soul!

Meet Micky. She's the creator of What Micky Eats and my very first "WIYF" blogger!

I'll let Micky do the talking & get to showing is what's in her fridge!

About Her Blog

"What Micky Eats" is a blog that follows my dining experiences at various restaurants around the world, with focus on where I live in Washington, DC. I am no food critic – just an average girl who enjoys eating out. The experiences I share are of places I read about or just stumble upon. Travel is also one of the things I love to do, so occasionally you might see a few recaps from places I’ve visited around the country or maybe even around the world!"

The Fridge!

I have what’s called a “side-by-side” refrigerator.  It’s a tall door design with the freezer area on the left and the refrigerator on the right.  The brand is Frigidaire and it has a water filtration system/ice maker, energy saver, crisp drawers, wire freezer drawers, etc.  It came with the house, when we purchased it in 2008, and still works great.

Upon first glance, my fridge looks clean – no magnets or notes cluttering the front. But turn to the side and surprise!

Here we have all the hidden secrets. Well, there is nothing too bad really.

Left: A list of emergency numbers for city utilities like power, gas, water along with a hand-crankable flash light

Middle: Several magnets from our travels around the world; restaurant coupons; a Washington Nationals 2013 calendar with wet erase board (we are huge baseball fans); Oh, and see that little white note on the top middle? That is a fortune that my husband saved from a fortune cookie from before we were married. It reads: “:) You and your wife will be happy in your life together. :)” (Yes, it has the two smiley faces on it, too! Aweee…so cute.)

Right: An old Save the Date from my now sister-in-law’s wedding last year; a sticker from my alma mater, USC, – Go Trojans!; an old Christmas card from friends in California featuring their bulldog, Fenway.

The Door

The Interior

Left: Eggs and butter for baking; various ethnic condiments.  This really shows our global palate with Kansas City barbeque sauce to homemade green Thai chili sauce (in the little squirt bottles) to Polish mustard.

Right: More condiments (looks like I need to buy more Sriracha sauce!); various sauces and herbs for cooking (I won a giveaway for a supply of about a dozen tubes of Gourmet Garden Herbs.  This product is great and we use them all the time while cooking.)

Left: Leftovers ready to take to work for lunch; milk; tea (my husband makes homemade ice tea every week from black oolong tea bags and his own simple syrup mix); lots of bread; more leftovers!

Right: Leftovers (we made baked ziti the other night); German beer (Fun Fact: I lived in Germany for a few months on a work assignment and fell in love with the culture.  We always enjoy celebrating Oktoberfest this time of year.); sandwich making products; almost empty fruit and veggie crisp drawers (I need to go shopping!). A few Honeycrisp apples are in there – perfect to make Apple Cobbler.

Note: Looking at these pictures, I noticed all the bread products!  We just went to Costco and sometimes I feel silly, because it is just the two of us.  We purchase all these large quantities of items that last us quite a while, but implies we must be feeding an army!

A Recipe!

It is very rare that I cook at home, but there are a few recipes that I’ve collected over the years and share in a series called What Micky Eats…At Home. Check out my blog for Top 10 restaurant lists, info on various food festivals/events, and fun experiments in my home kitchen!

A go-to classic recipe of mine is my Apple Cobbler.  This recipe is a family favorite.  I always have extra pie crust in the freezer as an easy vehicle for baking.  I find pie crust can be used to make savory breakfast quiches to sweet hand pies.

Many love to read and see "what Micky eats", but she is curious to see what YOU eat. Share all the delicious things you've been eating and drinking by e-mailing Micky a picture, and she’ll feature you on her blog! Please include your name and a short description of what/where it is you're eating. Send submissions to WMEsubmissions@gmail.com

A HUGE thanks to Micky for being the first courageous volunteer for this fun series! I feel like I know her pretty well just by taking a peek inside her fridge, don't you? {I'm not gonna lie, her love of condiments alone made me feel like we should be friends.} Don't forgot to hop over to her blog for more dining recommendations and recipes, or show her some love on her Facebook, Twitter, Pinterest or Instagram... you can tell her I sent you so she won't think you've been snooping around in her fridge without permission! ;)

Are you a food blogger who wants to be featured? Have a favorite food blogger whose fridge you'd like to peek inside?? Leave me a note in the comments or send me an email and I'll see if we can make it happen!

Sweet Potato, Fontina and Pecorino Flatbread & a {Bourbon} Cocktail!

I consider myself a pretty reasonable person.

And then college football season starts and that goes out the window.

I spent SEVEN very long {but lovely} hours watching college football last Saturday. Well, the football-watching accounted for only about 4 of those hours. But we had to get there {3 hours} early to make sure we were able to secure tables & chairs at this place because it gets packed, fast.

See? Complete loss of reasonableness.

Had my Gators lost at the end of that long stretch {on my birthday, no less}... we may have had a slight problem.

Luckily, that wasn't the case and all was right with the world.

Now, football food.

I wish they would have had something like this where we watched the game.

You're in luck because I'm sharing the recipes for this Sweet Potato, Fontina & Pecorino Flatbread with Rosemary and Honey AND an Apple Pie Bourbon Sweet Tea Cocktail over on Palm Beach Lately today.

The only reasonable thing to do would be to click here and check it out so you can make it next game day! ;)

Go Gators!

Bachelorette Bash: Cookies & Cocktails!

Love is in the air.

Two of my friends have gotten engaged within the past month and the party planning is in full swing!

It's totally fitting that my guest post today over at Palm Beach Lately is all about celebrating the Bride-to-Be!

What happens when a group of girls hops on a plane and head to the Hamptons for a weekend of bachelorette fun?

They drink champagne and dance on the table, of course.

I'm sharing an extremely fun cocktail that I named the UnBRIDALed Passion Float...

... and my favorite cut-out cookie recipe for any party that needs a touch of sweetness. {Which is every party, in case you were wondering.}

Hop over to Palm Beach Lately for the recipes!

What do you think is the ideal way to celebrate the "final fling before the ring"? I'm helping to plan a bachelorette party and I need ideas! :)

Curried Brown Rice with Zucchini

Busy people still need to eat.

Preferably real food, not the stuff that comes out of a bag, box, can or cellophane-covered plastic tray.

Today, I'm guest posting over on my friend Alyson's blog, The Average Girl's Guide and sharing this easy, nutritious {and non-boring!} recipe for busy gals {and guys!} who want to spice up your average meal!

While you're over there, make sure to check out everything Alyson likes to "dish" about... from fashion to family life. {My favorite: Her "Vent Sesh" series... I find myself emphatically nodding at the computer screen while I read them!}

Tell me... do you have an easy dish that adds zest to the weekdays?

Strawberry-Lime Mojitos & Cuban Black Bean Dip

Tell me you're not ready to muddle up one of these pretty cocktails...

{And guess what? I've healthied it up a little for you, too! Well... all except for the rum, of course. I'm making cocktails, not miracles.}

Strawberry Lime Mojitos & Cuban Black Bean Dip... a little taste of a sultry Havana night!

Hop on over to my guest post on Palm Beach Lately -- where fashion meets fabulous with a twist of Palm Beach style! -- for the recipes! And make sure to click around while you're there... you'll find tons of inspiration for your summer soiree. :)

A big thanks to the girls of Palm Beach Lately for inviting me over! xo
