Last Minute Spinach & Artichoke Dip

While the whole world was reserving their energy for tonight's big game, we had our own version of a "Game Watching Party" last night and, consequently, spent today doing a whole lotta nothing! Lazy Sunday? Yes, please! Never underestimate the power of our Super Sangria & Xbox Kinect!

As not to be big ol' party poopers, I decided to whip up some Last Minute Spinach & Artichoke dip for the hubby & me to snack on using a few things I just happened to have on hand. This recipe makes the perfect amount for a party of 2 hungry game watchers, or 4 trying to watch their girlish figures. ;)


Last Minue Spinach & Artichoke Dip




















Bad Picture... Good Dip!

You'll Need:

1 box frozen spinach, thawed & drained of as much liquid as possible
1 can artichoke hearts, drained
1 block 1/3 less fat cream cheese, cut into chunks
1/4 cup mayonnaise
Garlic Powder to taste
Onion Powder to taste
1/2 cup shredded cheddar (or your favorite cheese)

Directions:

1. Preheat oven to 375 degrees.

2. Place all ingredients in food processor. Pulse until somewhat chopped & ingredients are combined. (Do not puree unless you want a spinach & artichoke smoothie.)

3. Spoon spinach mixture into an oven proof dish. Top with your choice of shredded cheese.

4. Bake for 20 minutes or until heated through & cheese on top is melted and bubbly.

Serve hot with tortilla chips.
